Country of the month: North Macedonia

Our family has a “country of the month.” We pick a place and spend some time learning about it, with food as one of the best ways in. This month is North Macedonia, and I made tavče gravče.

The recipe’s structure is simple and memorable: dried white beans, roughly the same weight of onions, and enough paprika to lead the flavor. The beans are soaked and cooked first, then combined with the softened onions and seasonings before the whole pan goes into the oven.

For my version, I used dried lima beans. I also had some leftover smoked brisket, so I added that to the pan before baking. The smoke and richness worked beautifully with the paprika and onions, turning an already substantial bean dish into an especially hearty family meal.

Why this dish

Tavče gravče is traditional across North Macedonia and familiar in different forms throughout the Balkans. The name means “beans in a pan,” which is refreshingly direct. Traditionally, the dish uses large, flat tetovac beans from the city of Tetovo, though the recipe offers several easier-to-find white-bean substitutes.

It was a fitting country-of-the-month choice: rooted in a particular place, made from ordinary ingredients, and substantial enough to anchor a family meal. The paprika, onions, final bake, and brisket turned a pot of beans into something much more distinctive.

The full method and measurements belong to Aida’s recipe at Balkan Lunch Box. I’m keeping that one bookmarked.
